Easy Cheesy


Did you know that January 20th was National Cheese Lovers Day? One of the reasons why I love cheese is because it is so versatile and can be made into many different things. Cheese provides all the benefits of milk and can be found in main dishes like Mexican Beef and Cheese Bake, appetizers like Queso, side dishes like Cheesy Corn Fritters, and even desserts like Blueberry Ricotta Lemon Cake. And most cheese is lactose-free! When cheeses are aged the sugar from the milk, lactose, is turned into lactic acid. For this reason, hard cheeses like cheddar, parmesan, swiss are more easily digested by people with lactose intolerance. Some other interesting facts about cheese are that it takes 10 pounds of milk to make 1 pound of cheese, and the only other ingredients in natural cheese are salt, starter culture (healthy bacteria), and rennet (an enzyme). This means that milk is a super concentrated source of calcium, protein, and vitamins. So, are you going to enjoy some delicious cheese in your meals today?

I did not know that most cheese are lactose free! That is very interesting. I always order cheese boards or charcuterie boards when I go out to eat and definitely enjoy having it in my meals. I really dislike milk, so I am glad cheese has a lot of the same nutritional values.
